With the onslaught of industrial crap food in the United States—and the health problems resulting from the manipulation of food by industries with chemicals they must dispose of (think fluoride in toothpaste), increasing attention is being given to the sources and wholesomeness of the foods we eat.

La Cucina Povera refers to the cooking of the poor in Italy. Just about any culture will host some form of cooking of the poor of course. The reason the cooking of the poor is so enticing, so tasty, is that eating “low off the hog” uses the tastiest parts of the animal, which also happen to be the hardest to cook properly. Yet mothers have done it for years, and we celebrate it here.

La Cucina Povera will attempt to find web resources which will help you learn how to cook good food, creating a library of resources for the culinary anthropologist, the home cook, and the innocent gawker wondering what the fuss is all about since Spaghetti-Os are just about the best food on the planet.
